Rajma Onion tomato curry
About:
Tomato onion curry is the tasty side dish that can be made with ease. It is a variation to Rajma OR Kidney beans curry. This version is for onion lovers. Onion and tomato sauted with cooked red kidney beans with a blend of indian spices.
Health Benefits:
Cooked red kidney beans can liven up a wide range of meals including salads, soups and stews. These legumes are packed with protein, soluble fiber, folate, magnesium, potassium and a number of other health promoting nutrients.
Yield: 3-4servings
Preparation time: 10 minutes
Cooking time: 15-20 minutes
Ingredients:
- Rajma/red kidney beans-1 cup
- Finely chopped onion-4-5 num
- Finely chopped tomato- 3 num
- Slit green chillies-2 num
- Crushed garlic-3 cloves
- Chilli powder-1 tsp
- Coriander powder-1/2 tsp
- Cumin powder-1 tsp
- Garam masala-1/2 tsp
- Turmeric-1/4 tsp
- Clove-2
- Bay leaf-1
- Oil-2tsp
- Salt-as per taste
- Chopped Coriander – to garnish
Method:
- Wash and soak kidney beans overnight
- Cook soaked beans in the pressure cooker for 3-4 whistles by adding enough water to cover the beans
- Heat oil in the pan add cloves, bay leaf after few seconds add onion, garlic, green chillies and fry till the onions are translucent
- Add tomatoes, salt, chilli powder, turmeric, coriander powder, turmeric, garam masala and cook until tomatoes are soft and mushy
- as the tomatoes are cooked well add cooked rajma/kidney beans and cook for 5-7 minutes or until combined with spices
- Garnish with coriander leaves
Serve hot with roti/parathas
Note:
- You can use canned kidney beans instead just drain and rinse before using it
- This can be enjoyed as a curry with thick consistency or for gravy mix 1tbsp corn flour with 1cup water/milk add it to the curry mix well and simmer for 5 more minutes
