White mint sauce for Spaghetti/Pasta

About:

This creamy white sauce is made using 2%fat milk, whole wheat flour and olive oil without using any cream/cheese. You can enjoy it with your favorite pasta/spaghetti (link1/link2) or even in sandwiches. I used fresh mint paste in the sauce for the flavor in place of dried herbs.

I blanched mint for few seconds in hot water but it can be used without blanching as well. enjoy this minty white sauce on your favorite pasta dishes.

Yields: 2cups
Preparation time: 10minutes
Cooking time: 15minutes

Ingredients:

  • Wheat flour-3-4tbsp (depending on the consistency)
  • Low fat milk-3cups
  • Mint-two handsful
  • Salt- to taste
  • Ground black pepper-to taste
  • Olive oil-3tbsp

Procedure:

  • Blanch mint in hot water just for 30seconds-45second drain completely and squeeze excess water and blend it in the food processor without adding any water.
  • Now add olive oil in a heavy saucepan over medium heat, blend in the flour, keep stirring and cook for 2minutes to leave the raw flavour of the flour.
  • Lift pan from the heat, add milk and whisk until smooth and place the pan back on to the heat/flame
  • Add in mint paste cook stirring constantly until thickened. ( 10-12minutes)

Note:

  • Can include cheese or even replace low fat milk to whole milk for more creamy texture
  • Seasoning can be personalised as per the taste.

  7. I have to admit I’m not a big fan of mint. On the other hand, as I think about it, I’ve never had it aside from mint-flavored things that also contain sugar. So now you have me intrigued. I think this will be a great thing to try. Thanks! 🙂
