Orange dressing on Italian greens salad
About:
Fresh leafy greens, bell peppers, cherry tomatoes, green onions tossed with homemade orange dressing. I used Italian greens here if any of these are not available handy feel free to use any greens of your choice and dressing can also be personalised but orange dressing added the orange flavour to the salad so if you are a orange lover this salad will be a great serving.
Serves: 2-3
Preparation time: 15 minutes
Ingredients:
- Romaine lettuce-torn -1/2cup
- Kale leaves -1/2cup
- Baby spinach-1/4cup
- Apollo (green frilly leaves)-1/4cup
- Red bell pepper-1/2 sliced
- Green bell peppers-1/2sliced
- Green onions sliced-1/4cup
- Cherry tomatoes-8-10
For dressing:
- Freshly squeezed orange juice-1/4cup
- Raw honey-1tbsp
- Orange zest-1/2tsp
- Minced garlic-1/2tsp
- White vinegar-2tbsp
- Salt-1/2tsp
- Oregano/dried herbs-1/2tsp
- Ground pepper-to taste
Procedure:
- Combine orange juice, zest, vinegar, honey, salt, dried herbs in a bowl and then whisk, season with ground pepper ( 1-2tbsp of olive oil can be included if desired)
- Add all the remaining ingredients and toss well. serve right away.
I served this with Tofu tikka (Recipe link)
Note:
- Dressing can be prepared ahead and stored in the refrigerator

I love orange in salad, I will often buy a can of mandarin oranges just for that. Your salad dressing sounds very fresh and citrusy and perfect with the greens. I will get some oranges and make this, great recipe.

its my latest obsession – to throw in a fruit in my salads.. and usually its an orange or some pomegranate. Love this idea. Crunch from broken nuts like toasted walnuts n almonds works great too.. do try!
