Coated and baked asparagus (eggless)

Baked asparagus fries should be the eighth wonder of the world. How can something deemed “fries” not actually be deep-fried and yet still be delicious?…
These coated asparagus are crispy on outside and tender inside. Try this coated baked asparagus as a healthy evening snack and they are even kids friendly too.
Health benefits:
Asparagus is an alkaline food which is rich in protein but low in calories and carbohydrates. It is an excellent source of potassium, folate and vitamins.
A good source of dietary fiber, asparagus is also rich in niacin, phosphorus and very low sodium. And certainly most impressive is that it is one of those few vegetables that actually as the calcium and magnesium in the ideal ratio of 2:1.
Servings: 2
Preparation time: 10 minutes
Baking time: 15 – 18 minutes
Ingredients:
- Asparagus-10 (cleaned and bottom trimmed)
For coating:
- Bread crumbs-1cup
- Corn starch-1tbsp
- Besan / Chickpeas flour-3tbsp (or more depending on the thickness of the batter)
- Milk of choice-1/2cup
- Salt- to taste
- Garlic powder-2tsp
- Dried parsley-1tsp
- Cooking spray
Procedure:
- Pre-heat the oven to 180 deg, line the baking tray with foil/parchment paper.
- In a shallow dish, whish in milk, corn starch, garlic powder, chickpea flour and salt.
- In another separate shallow dish, combine bread crumbs, dried parsley.
- Dip each asparagus in milk-flour mixture until its thoroughly coated then varnish with bread crumbs, pressing to secure them to the asparagus. Transfer the asparagus to the prepared baking sheet.
- Repeat the breading process with remaining asparagus, spacing them about 1 inch apart on the baking sheet.
- Lightly spray the asparagus with cooking spray and bake them for 15-18 minutes until golden brown and crispy.
- Remove the asparagus fries from the oven and serve them immediately.
Note:
- Can deep fry if desired but that might add some calorie in your diet.
- Herbs for coating can be personalised as per taste
- The asparagus bottom is removed, which has chewy texture.
