Okra Brocolli in yogurt gravy

If you planning to try a new curry and make something simple give this curry a try. This is simple, quick and delicious serve to your family, friends & guests. After I made and tasted it, this dish has become one of my favourite side dishes to go with naans or rotis. The sauce is so rich and creamy from the yogurt-coconut paste added and it has the right balance of spices, the flavour is awesome and just loved it.

Okra contains nutrients that may confer a number of health advantages, including a decreased risk of several serious medical problems. Okra is a “power house of valuable nutrients”. It contains no fat or cholesterol, rich amounts of soluble fiber, which promotes healthy cholesterol levels, and insoluble fiber, which promotes a healthy digestive tract, lowering your risk for colorectal cancer.
Broccoli is a good source of vitamin C and folate (naturally occurring folic acid). It also contains vitamins A, K, calcium, fibre, beta-carotene and other antioxidants
Yields: 3-4 servings
Preparation time: 20 minutes
Cooking time: 20 minutes
Ingredients:
- Okra/bhindi-25
- Broccoli-1small head
- Chopped spring onion white-1/2cup
- Spring onion greens-1/4cup+for garnishing
- Yogurt/curd-1cup
- Besan/chickpea flour-1tbsp
- Turmeric powder-1/2tsp
- Mustard seeds-1tsp
- Cumin seeds-1/2tsp
- Curry leaves-10
- Salt- to taste
- Oil-2tsp+for roasting okra
For grinding:
- Roughly diced onion-1medium
- Fennel seeds-1tsp
- Green chillies-3
- Desiccated coconut-2-3tbsp
- Ginger-1/2inch piece
- Fresh coriander-a handful
Procedure:
- Trim the edges of the okra and slice to 2-3pieces.
- Beat the yogurt, besan/chickpea flour in a bowl and keep it ready.
- Heat 2tsp oil, add the sliced okra and saute it uncovered on low heat, till it’s almost tender and crisp (approx. 8-10minutes) remove and keep aside.
- Now combine onion, green chillies, coconut, fennel seeds, ginger, fresh coriander and ground to smooth paste and keep aside.
- Now heat oil in another saucepan add mustard seeds as it splluters, add cumin seeds, curry leaves and saute for a few seconds.
- Then add spring onion white and sauté for a minute.
- Then add broccoli and sauté for 3-4minutes.
- Add salt, turmeric, ground paste, beaten yogurt and saute till it turns thick.
- Once the mixture thickens add sauted okra/bhindi, spring onion green (add water if the as per the desired consistency) and simmer it on low for 5minutes and remove.

I only learned recently how healthy okra was. A friend told me that it’s particularly beneficial for diabetics.
