Spiced toasted Panner
About:
This dish is so aromatic, but each piece of paneer/cottage cheese had unique and robust flavours…
The unsalted fresh white cheese is fantastic with strong flavoursome sauces, and the yoghurt in the marinade starts to break down the paneer and the vegetables, allowing them to absorb even more flavour.
It makes a fantastic snack or even a pre-dinner canapé, serves drizzled with lime juice or the dressing below as a dipping sauce.
Yields-10-12 slices
Preparation time-10 minutes
Waiting time-3 minutes-1 hour
Cooking time-6-8 minutes (per batch)
Ingredients:
- Low fat paneer/Cottage cheese – (Link to Home made recipe)
- Oil- for toasting
For marinade:
- Greek yogurt-2tbsp
- Turmeric-1/2tsp
- Green chillies-2
- Garlic-2 cloves
- Cumin powder-1/2tsp
- Chopped cilantro/coriander-2tbsp
- Salt- to taste
Procedure:
- Coarsely crush/grind garlic, coriander, green chillies in a food processor/in a mortar and pestle.
- Transfer to a mixing bowl and whisk in yogurt, turmeric, salt, cumin powder until combined to form a thick paste.
- Cut each block of paneer into equal sized cubes and add to the marinade mixture – stir to coat well.
- Cover and refrigerate for atleast 30minutes-1hour (or more if time permits)
- Toasting the slices:
- Heat the pan over a medium flame and drizzle some oil on base of the pan.
- When hot place the slices in batches and cook until golden underneath, then turn over and cook until golden all over.
- Serve hot/warm drizzled with some lemon juice/soy sauce.
