Baked Kachoris
About:
This year again I re-made this recipe with a thought to capture new pic. It is filled with Green Moong Dal. These little gems are delicious and heard to resist, which can be enjoyed as appetizer/snack.
Kachori is a popular Indian appetizer which is flattened ball made up of plain flour with a stuffing baked mixture of yellow moong dal/urad dal, besan or any filling of choice. They are a delicious treat which can be relished on its own with some dip/sauces
Yields: 12-15 Kachoris
Soaking time: 6-8 hours
Preparation time: 15 minutes
Cooking time: 15 minutes
Baking time: 20-25 minutes
Ingredients:
For dough:
- Wheat flour-3/4cup
- Fine semolina-1/4cup
- Salt- to taste
- Olive oil-2-3tbsp
- Carom seeds-1tsp
For stuffing:
- Green mung dal- 1/2 cup
- Brown lentil-a handful
- Cumin seeds-1/2tsp
- Fennel seeds-1/2tsp
- Turmeric-1/4tsp
- Chilli powder-1tsp
- Minced ginger-1/2tsp
- Minced garlic-2cloves
- Honey-2tsp
- Salt- to taste
- Oil-2tsp
For baking:
- Olive oil/butter – To spread.
Procedure:
For dough:
- Combine all the ingredients mentioned in a bowl, add water and knead into soft dough
- Divide the dough into equal portions and cover with a cling film/ wet muslin cloth and set aside for 10-15 minutes.
For stuffing:
- Wash Green moong dal and brown lentils thoroughly for 2-3 time/until the water runs out clear.
- Add 2 cups of water and soak 6-8 hours/overnight.
- After soaking time drain the water from the dal and keep aside.
- Boil water in a pot and add in drained mung dal, brown lentils, salt and cook for 12-15 minutes/until cooked but not mushy. (To verify take some dal while cooking and it should be soft enough to squeeze between your fingers)
- Once cooked drain water completely from the cooked dal.
- Heat oil in a pan add in fennel seeds, minced ginger,garlic, turmeric powder, red chilli powder mix well and add just a tablespoon of water and saute for 1-2 minutes.
- Add cooked dal,salt, honey mix well and saute on a medium flame for 3-4 minutes/ until the moisture evaporates stirring continuously.
- Remove from the flame and let it cool.
- As it cools down place it in the food processor/blender and just crush it to course without adding any water. (it need not be fine just crushed to course will do)
For Kachori:
- Pre-heat the oven at 180deg C(Fan assisted), line the baking tray and set aside.
- Divide the dough into equal portions and shape them into balls
- Roll each portion to small discs and place a tablespoon of filling
- Bring the edges together and seal into a round and start arranging on a prepared baking tray
- Once the tray is full brush the kachoris with some oil and bake for 20-25 minutes, flipping once after 10-12 minutes.

Very detailed Recipe!
But the problem with Kachoris is that because of the absorbed oil, they fill you up and kill the appetite. What would you say is the solution to this problem?
