Raagi/Millet flour – Masala Nippattu/Savoury Crackers
About:
Millet thins but I think they’re so much healthier. It’s crunchy and delicious, has a subtle swet and spicy and gives you plenty of energy
These crackers are spicy, salty with a hint of onion, curry leaves. I used all millet flour but feel free to use regular white or do a mix, either combination is fine. When the dough is made, it will be crumbly so be patient when rolling it out.
Yields – 15 to 18
Preparation time-10 minutes
Cooking/baking time- 12 -15 minutes
Ingredients:
- Millet flour-1cup
- Wheat flour – ½ cup
- Rice flour-1 tbsp
- Finely chopped onion-1medium
- Roasted crushed groundnuts-1/4cup
- Sesame seeds-3tsp
- Baking soda-1tsp
- Finely chopped green chillies-3-4
- Oil-2-3tbsp
- Finely chopped curry leaves-2-3 sprigs
- Honey-2 to 3 tbsp
- Salt- to taste
Procedure:
- Sift in millet flour, wheat flour, rice flour, baking soda, salt in a mixing bowl .
- Add in chopped onion, curry leaves, sesame seeds, oil, honey mix well until combined.
- Sprinkle a little water at a time and mix until a stiff dough is formed. Cover and let it sit on the counter for 15-20 minutes.
- Meanwhile pre-heat the oven 180 degree C (fan assisted) , line the baking tray with baking sheet and set aside.
- Divide the dough into equal portions and roll each portion into a disc of 1 mm thickness (While rolling dough may stick so you can grease some oil to roll and dough OR you can dust some powder which will tend to make the cracker looks dry). Using a cookie cutter or any cutter and cut out the crackers into desired shapes and prick holes into the dough using fork.
- (Do not overlap the crackers or it might bake uneven , so if the dough is still remaining bake it in batches)
- Arrange the crackers on a prepared baking sheet and bake in a pre-heated oven for 12 -15 minutes, flipping half way.
- Once baked allow the crackers to cool completely.
- Once cooled completely store them in a air tight container .
Note:
- Baking time may vary from oven to oven so keep an eye and bake until golden brown in colour.
- While baking do not over crowd the crackers as it might lead to uneven cooking , so if the dough is more – bake it in batches.
- Spices can be personalised as per the taste
- Honey can be replaced with Brown sugar OR it can even be skipped

These crackers sound marvelous, Chitra. I like millet as a grain. But here, I’ve only found it (or things made from it) at the most expensive stores. I wish it would get more “main stream” acceptance.
