Orange and Sooji – Dhokla
About:
Instant orange Dhokla Recipe, a famous and healthy snack from Gujarat and this recipe is made using chickpea/semolina batter which can be eaten for breakfast, as a main course, as a side dish or as a snack.
Here just as a variation I used orange juice and the flavour was not at all dominating instead it made the dhokla fluffy and soft.
Preparation time-10 minutes
Resting time-30 minutes
Cooking time-15-20 minutes
Yields:3-4 servings
Ingredients:
- Fine sooji/semolina/rava-2cups
- Crushed ginger-1/2inch
- Crushed/minced green chilli-1-2
- Oil-1tsp
- Fresh Orange juice-1/4cup
- Yogurt-1/2cup
- Water-1/2-3/4cup (adjust as per the consistency)
- Baking soda-1tso
- Salt- as per taste
For tempering:
- Oil-1tbsp
- Mustard seeds-1tsp
- Sesame seeds-1tsp
- Curry leaves-1-2sprigs
- Hing/asafoetida- a generous pinch
For garnishing:
- Chopped fresh cilantro/coriander
Procedure:
For batter:
- In a mixing bowl combine semolina, crushed green chillies, ginger, salt, oil and mix well.
- Now add yogurt mix well until the semolina becomes a thick paste, now add little water at a time until it forms a thick lump free batter. (the batter consistency should be of idli batter consistency)
- Now let it rest for 20-30 minutes.
For steaming dhoklas:
- After resting time, prepare the steamer add a glass of water in a steamer/cooker and let it come to boil. Grease the dhokla tray/pan with oil (or round 9inch cake pan can also be used)
- Once all set mix baking soda in orange juice and pour it over the dhokla batter, give it a quick stir and pour the batter into the prepared tray- steam for 12-15minutes or until the tooth pick or knife inserted comes out clear.
- Once cooked, remove the tray from the steamer and let it cool for 5minutes
Meanwhile prepare the tempering:
- Heat oil in a small pan over medium heat, add mustard seeds as it crackles
- Add asafoetida, sesame seeds and curry leaves and fry for few seconds.
- Turn off the flame and carefully add the tempering over the dhokla and spread evenly.
- Garnish with some fresh coriander/cilantro.
Then cut into desired shape and serve.

Note:
Batter consistency should be of thick yogurt or idli batter consistency.
Orange juice acts as a citric acid here so I haven’t used lemon juice.

Wow Chitra – I love dhokla – my hubby’s family come from Gujurat so he introduced me to it. We add poppy seeds too on the topping – and of course I’ll be experimenting with adding Orange too!
