Pineapple mint vinaigrette dressing (Zero oil) on roasted vegetables
Fresh homemade dressing is the amalgamation of sweet and tangy taste with flavour of mint. It is spiced with jalapenos. The spiciness can be adjusted by skipping jalapenos and by adding ground pepper. I served this with zucchini-bell pepper-onion roasted salad.
Yields: 2-3 servings
Preparation time: 10 minutes
- Pineapple chunks-1/2cup
- Mint leaves- a handful
- Jalopenos-1/2 from small one
- Cider vinegar-2tbsp
(I haven’t used any oil in my dressing can be included if desired)
- Combine all the ingredients in the food processor and process until smooth.
- Serve this with any salad of choice or Cover and refrigerate until ready to use.
- I served this with roasted vegetables.
