300th Post: Tofu kale baked dumplings – Vegan


Kale tofu baked dumplings

About:

This recipe is based on kale baked falafel which I made for wraps earlier (link). Now this time I included tofu and baked it. You can also easily use any vegetables if preferred and swap kale with it.

Health Benefits:

  • Kale can provide you with some special cholesterol-lowering benefits if it is steamed. Raw kale still has cholesterol-lowering ability—just not as much.
  • Kale’s risk-lowering benefits for cancer have recently been extended to at least five different types of cancer.

This kale tofu balls are great by itself for the snacks and this goes well with pasta. (link)

Thai red curry


Red Thai Curry

About:

Traditionally red curry is assorted vegetables simmered and cooked in coconut milk with red curry paste. Red curry paste is available in the supermarket but have used homemade (Recipe included), which can be personalised as per the taste. Here in this curry I have used baby corn, tofu, bell peppers, broccoli and simmered in coconut milk.

This curry goes very well with steamed Thai Jasmine rice. Make this a meal by serving with a starter Noodles Cakes (Link)

Cooking time: 25 minutes
