This Sabzi is similar to that of aloo gobi as a variation have used bell peppers and roasted vegetables instead of sauting in the pan. This dish is not only delightful but easy to prepare as well, roasted cauliflower, potato, bell peppers are tossed in aromatic indian spices and topped with peanut powder gives a nutty taste to the dish.

Health Benefits:

Roasted vegetables contains very high amounts of vitamin A, vitamin B6 and vitamin C. It is full of antioxidants and anti aging and anti cancer agents.Roasted veggies is also very high in dietary fiber and potassium and has no cholesterol.

Baked Bottle gourd Kofta/Dumplings in Walnut Tomato gravy

About:

Bottle gourd/Lauki/Dudhi kofta curry is the tastiest dish. Here the koftas are made with grated bottle gourd, carrot, gram flour and baked until golden and then simmered in the walnut-tomato gravy. Using walnuts helps to thicken the gravy and gives a creamy texture without adding any cream or milk. However any nuts can be used alternatively and feel free to use cream/milk if desired.
