Baked Chirote/Glazed Sweet Puri

About:

Chirote is festivals favorite sweet dish in India. Here the two-three rotis are topped on each other and corn starch and ghee paste is spread to retain the layer and rolled.

As a variation tried with low fat Sunflower spread instead of Ghee; Honey instead of Sugar with reduced Plain flour used. Baked the puris to reduce the overall calories of the dish

Yields: 10 -12 Puris
Preparation time: 30 minutes
Baking time: 20 minutes
Waiting time: 20 minutes

Ingredients:

  • Fine semolina -1/2 cup
  • Plain flour/Maida/All Purpose Flour -1/4 cup
  • Rice flour -1/4 cup
  • Powdered brown sugar – 2 to 3 tbsp
  • Pinch of salt
  • Low fat Sunflower spread Olive – 2 tbsp

For paste:

  • Corn starch-2-3tablespoon
  • Unsalted olive spread-2-3tbsp

For syrup:

  • Honey/Maple Syrup/Icing Sugar – As per taste
  • Cardamom powder-1/4tsp
  • Nuts – For Garnishing

Procedure:

For dough:

  • Combine Semolina, Plain flour, Rice flour, Olive spread and mix well until becomes crumbly.
  • Add 1-2 tbsp of water at a time a until a dough is formed . keep it covered for 15-20 minutes.
  • Divide the dough into 6 equal portions, take 3 portions and keep the remaining portions covered.

For paste:

  • Combine olive spread and corn starch together to form a paste.

For chirote:

  • Pre-heat the oven at 180 deg C (Fan assisted). Line the baking tray and set aside.
  • Roll each portion into a paper-thin roti and set aside.
  • Now take one rolled roti and spread the corn starch-olive spread mixture evenly.
  • Then place the second roti on top of first roti. Spread the corn-spread mixture again on the second one.
  • Once done roll completely, cut into small Β½-1 inch slices.
  • Repeat the same with the remaining rolled rotis.
  • Roll the cut pieces again to small pooris without applying much pressure while rolling.
  • Once rolled arrange on the lined baking tray without overlapping each other.
  • Brush some spread/butter on each one and bake for 12-15 minutes.

To Serve:

  • Dip the baked puris in honey or maple syrup OR Sprinkle some icing sugar.
  • Drizzle some Caradamon powder and nuts

Note:

  • I used honey syrup as a healthy substitute to sugar syrup, feel free to use sugar syrup/sugar if desired.
  • Ghee/Butter can be used in place of Spread
  • Chirote can also be deep fried but that might add some calories to the dish using same procedure
  • I just used brown sugar which is crushed in blender/food processor
  • White sugar can be used in place of brown sugar
