About:

Maddur vada is a savoury fritter named after the place near Mysore in the state of Karnataka (South India). These are crispy snacks and goes well with tea and can also be served as anytime snacks.

Here in this recipe I made vadas from  rice flour, semolina which are mixed with sliced onion, grated cabbage, curry leaves, asafoetida. I have retained the ingredients of traditional recipe but baked them as a healthy option instead of deep fried.

Yields: 8-10
Preparation time: 1 5 minutes
Baking time: 20-25 minutes

Brown rice and Oats Idli

About:

Idli is a steamed cake made from rice and black lentils (Urad dal) originating from Southern India. Idlis are made in a specialized mould and eaten with chutney, vegetable stew or other flavourful toppings for breakfast or as a snack. These small treats are good for you and, as a bonus, convenient for those on the go.

As a variation to make this fibre rich dish have added Brown rice, Oats, Red rice flakes and Soya Bran.

Health Benefits:

Soy bran refers to the finely pulverized or pureed hulls (or outer-casings) of dried soybeans. Soya bran helps lower Cholestrol levels and also ease constipation.

Red rice flakes are rich in Iron and Vitamin B.

Quantity: 18-20 Idlis
Cooking time: 15 minutes
