Zucchini pizza boat
About:
Stuffed zucchini pizzas are incredibly addictive, healthy, nutritious pizza. Here I added just the flesh of zucchini and cherry tomatoes and topped with very less low fat mozzarella cheese and herbs. Usually Stuffed zucchini are filled with vegetables and bread crumbs.
Zucchini has a tender texture with a slightly sweet flavour and, at just 21 calories per cup, it makes a welcome addition to a calorie-controlled diet. Zucchini boasts a rich nutritional profile, and it offers health benefits thanks to its phytonutrients, mineral and vitamin content.

Steamed Spinach Rolls filled with Mashed potato
About:
I’ll use just about any excuse to work more dark leafy greens like Spinach, Fenugreek and kale etc., into my diet. I blend them into smoothies, shred them for salads and add them to almost every soup I make.
My newest obsession is using the leaves in place of tortillas and wraps to enclose favourite filling.
Health benefits:
Like other dark greens, spinach is an excellent source of beta-carotene, a powerful disease-fighting antioxidant that’s been shown, among other things, to reduce the risk of developing cataracts. It fights heart disease and cancer as well. Spinach also contains lipoic acid, which is being investigated for regulating blood sugar levels.
