Roasted peanut and cucumber – Raita
About:
Cucumber raita is a very popular accompaniment with pulao or biryani. The peanuts add a crunch to the soft cucumbers and gives great taste.
Serves: 2 – 3
Preparation time: 15 minutes
Ingredients:
• Grated cucumber- 1cup
• Low fat Yogurt- 1 1 /2cup
• Roasted peanuts- 3tbsp
• Green chillies- 2num
• Coriander (Cilantro) -a handful
• Ginger- 1/2inch
• Mint – 8-10 leaves
• Cumin powder-1/2tsp
• Salt- as per taste
• Roasted pistachio-8-10 num (optional)
Procedure:
• Grind green chillies, coriander, mint and ginger to paste and set aside (add little water If required while grinding)
• Pound/ coarsely pulse the peanuts in the mixer
• Beat yogurt in a bowl add grated cucumber, grinded paste, crushed peanuts, cumin powder, salt and mix well.
• Top it with roasted crushed Pistachio/ coriander and serve with biryani, pulao or rotis

Note:
• I used roasted peanuts so roasting is skipped. If you using unroasted then roast peanuts until slightly brown , let it cool down and then grind/ crush
• You can even finely chop chilli, coriander, mint and ginger
• Using pistachio is optional I just used it for garnishing
